Per Non Dormire – For Not Sleeping” is the motto of the Marquises Bartolini Salimbeni, former owners of Torre a Cenaia Estate before the Pitti Family. The legend tells that, by means of wine mixed with opium, the noble Tuscan family was able to build his fortune, doing numb business rivals during a banquet.

This wine comes from a blend of Merlot and Syrah and is aged in Allier oak barrels. It’s a tribute to the audacity and to the dreaming, memento to the “carpe diem”.

Per Non Dormire has an intense ruby red color and an enveloping scent, it has a consistent structure and a complex palate; the flavor is velvety, silky, enveloping. It is the ideal companion for important banquets, where is distinguished by prestige and elegance.

Origin: Torre a Cenaia Ancient Pitti Estate, today owned by Terzi-Coppini families; Tuscany

Grapes: Merlot, Syrah

Vineyard: Est-west exposure; Guyot espalier

Terrain: Medium clay mixture

Harvest: Merlot: first ten days of September; Syrah, second decade of September

Vinification: Soft destemming-crushing, fermentation at controlled temperature in vitrified cement vats for 20-25 days, malolactic fermentation in vitrified cement vats

Refinement: In Allier oak tonneaux medium toasted for 12 months

Refinement in bottle: 24 months

Alcohol: 14,5% vol

Tasting: Vivid ruby colour with violet reflex. Intense red fruits aromas with light floreal notes. The taste is fresh and armonius, well balanced with good tannins structure

Food pairing: Wine with a charming and persistent expression, it goes well with all kinds of red meat and with mushrooms and mature cheeses

Service temperature: 18-20 °C
