This is a superior red wine resulting from the blend of three noble vines that in Torre a Cenaia best express their characteristics, enhanced by aging in Allier oak.

ORIGIN
Torre a Cenaia Ancient Pitti Estate, today owned by Coppini family; Tuscany.

GRAPES
Sangiovese, Syrah, Cabernet-Sauvignon.

VINEYARD
Podere del Bosco.

TERRAIN
Medium clay mixture.

HARVEST
Sangiovese and Syrah second and last ten days of September, Cabernet second ten days of October.

VINIFICATION
Soft destemming-pressing, fermentation at controlled temperature in vitrified concrete tanks for 20-25 days. Malolactic fermentation in vitrified concrete tanks.

REFINEMENT
Part in vitrified cement vats and part in Allier oak tonneaux medium toasted for 12 months.

REFINEMENT IN BOTTLE
12 months.

TASTING
Very intense ruby red color with strong violet reflections. Complex and persistent aroma, with balsamic and wild fruit scents. Elegant and enveloping flavor, with a high tannic structure, soft and velvety.

FOOD PAIRING
It goes well with roasted and grilled meats, game meats, mushrooms and aged cheeses.
